“HORIATIKI” GREEK SALAD

ngredients: Four tomatoes, sliced in segments (must be hard, salad tomatoes), One sliced onion, 1/2 sliced cucumber, Some olive oil, Sliced feta cheese (a white, salty cheese made with goats milk), Salt, pepper and oregano seasoning.

Mix the ingredients together and spread the oil over them. Sprinkle some salt, pepper and oregano.

GREEK GARLIC BREAD

Mix some trimmed garlic with oregano and lots of extra virgin olive oil and use it as a dip for bread slices or smear the dip on the bread slices and bake them for 10 minutes

SALAD DRESSING

Press in one large garlic clove directly into a glass jar. Then measure and add in a teaspoon of the dried oregano, a 1/2 teaspoon of kosher salt and a 1/4 teaspoon of ground black pepper. Squeeze, measure, strain and pour in theĀ 1/4 cup of fresh lemon juice, which it typically one whole lemon.

Measure out a 1/2 cup of extra virgin olive oil and add that directly to the jar with the spices and garlic. Close the jar and shake well. Your dressing is ready.

TUNA IN OLIVE OIL & BEANS

Pour extra virgin olive oil, oregano and pepper on some tuna filet and use the beans as a side salad for this light, low calories plate.
